Production notes | The fruit was handpicked before a gentle destemming. At the winery the primary Fermentation was for 12 days. Skin contact and hand punched down while fermented in small open-top tanks prior to pressing. A secondary ML fermentation was conducted post pressing. The barrel aging for this Pinot Noir was a regimen of one-quarter of new, once-used and neutral French oak. After maturing for 10 months, 12 barrels were selected in to comprise the final blend. |
